Some recipes try to be clever. This one just tries to be on the table in under 45 minutes with zero fuss. Mission accomplished.

Chicken breasts go into a baking dish, get blanketed with Swiss cheese, then covered in cream of chicken soup thinned with a little milk. A crunchy layer of crushed herb stuffing mix tossed in melted butter goes on top.

That’s it. Five ingredients. Into the oven it goes. Out comes a bubbling casserole with a golden, crunchy top and tender chicken swimming in a cheesy, creamy sauce underneath.

Kitchen Tips

  • Pound the chicken breasts to even thickness so they all cook through at the same rate. Nobody wants one overdone breast and one raw one.
  • Crush the stuffing mix lightly so you get a mix of textures on top, not just fine crumbs.
  • Don’t skip the butter on the stuffing. It’s what makes the topping crisp and golden instead of dry and dusty.

Directions

Place chicken breasts in a greased 9×13-inch pan.

Top with cheese.

Combine Cream of Broccoli Soup and milk and spread over cheese.

Toss melted butter with stuffing mix and sprinkle over top of chicken.

Bake in a 350℉ (180℃) F oven for 30 minutes, or until tender.
