Creamsickle Cake
Submitted by trulyshuly
A poke-style orange creamsicle cake made with orange cake mix, Jell-O, and a fluffy vanilla pudding-whipped topping frosting. Tastes just like the frozen treat from the ice cream truck.

1 hrsClose your eyes and take a bite, and you’re eight years old again chasing the ice cream truck down the street.
This creamsicle cake nails that classic orange-and-vanilla combo using a simple poke cake technique: orange cake gets stabbed with a fork, soaked with orange Jell-O, then smothered in a thick, fluffy frosting made from vanilla pudding, whipped topping, and a hit of orange flavoring.
It’s a semi-homemade stunner that takes almost no effort and tastes like pure nostalgia.
Keep it chilled and watch it disappear at any potluck or barbecue.
Pro Tips
- Poke holes while the cake is still slightly warm so the Jell-O soaks deeper into the crumb.
- Use a meat fork or the handle of a wooden spoon to make the holes; you want them deep but not all the way through.
- Let the Jell-O set completely in the fridge before frosting, or the icing will slide right off.
- This cake actually tastes better the next day after the flavors have had time to meld together.
