Crazy cake (depression cake) is an egg-free, dairy-free chocolate cake mixed directly in the baking pan with cocoa, oil, vinegar, and water. Vegan-friendly and ridiculously easy.

1½ hrsCrazy cake earned its name during the Great Depression, when bakers had to make chocolate cake without eggs, butter, or milk (all of which were rationed or in short supply). It’s also called wacky cake, depression cake, or war cake. The trick is the chemistry: vinegar reacts with baking soda to provide the lift that eggs would normally give, while vegetable oil keeps the crumb tender without dairy.
The whole thing gets mixed directly in the baking pan. Sift the dry ingredients into the greased pan, add the wet, stir with a fork, and bake. No mixer, no separate bowl, no cleanup beyond the pan and a fork.
This happens to also be vegan, which has given the recipe a second life with modern bakers. Frost it, dust it with powdered sugar, or eat it warm with ice cream. The recipe holds up better than most newer chocolate cakes.
Pro Tips
- Don’t beat the batter; stir gently. Vigorous mixing develops gluten and turns the cake rubbery.
- Use cold water, not warm. Cold water keeps the chemical reaction (vinegar + baking soda) from starting too soon.
- Make it a day ahead. The flavor genuinely improves overnight as the cocoa deepens.
- Use unsweetened natural cocoa, not Dutch-process. The acid in natural cocoa is part of the leavening reaction.
Variations
- Add 1 teaspoon espresso powder to the dry ingredients to amplify the chocolate without coffee flavor.
- Replace water with cold brewed coffee for a mocha twist.
- Top with peanut butter frosting for a depression-era classic combo.

Directions
For best results, prepare this cake the day before you intend to serve it to allow the flavors to mellow.
Preheat oven to 350℉ (180℃).
Generously grease on 8×8×2 inch square baking pan.
Sift together flour, sugar, cocoa, baking soda, and salt directly into the baking pan.
Add water, oil, vinegar, and vanilla extract.
Stir (DO NOT BEAT!) with fork until mixture is smooth and Place pan on center shelf of oven.
Bake until toothpick inserted in center of cake comes out clean (30-35 minutes).
Let cool.
Sprinkle with powdered sugar (or frost with the frosting of your choice).
