A succulent pork roast simmered to perfection with cranberries and a bit of honey.

Ingredients

3 pounds pork roast
1 x salt to taste
1 x black pepper to taste
1 cup cranberries finely chopped
1/4 cup honey
1 teaspoon orange peel, grated
1/8 teaspoon cloves ground
1/8 teaspoon nutmeg ground

Directions

Sprinkle roast with salt and pepper. Place in crockpot. Combine remaining ingredients; pour over roast. Cover and cook on Low for 8 to 10 hours.

Makes 6 to 8 servings.

Boneless or pork loin roast may be used.

Beef Curry with Orzo

I served the curry with rice instead of orzo. Pretty good recipe. The curry was little soupy, though. Next time, I would add more curry powder, for our family likes foods with lots of flavor.
