| 2 | tablespoons | butter | |
| 1 | teaspoon | onion | finely chopped |
| 1 | tablespoon | parsley leaves | finely chopped |
| 1 1/2 | cups | crab meat | chopped |
| 2 | tablespoons | flour, all-purpose | |
| 2 | cups | chicken broth | |
| 2 | cups | cream | light |
| 1 | pinch | cayenne pepper | |
| 1 | x | salt |
In a saucepan, melt the butter.
Add the onion and cook slowly until golden.
Add the crabmeat and parsley and cook over low heat stirring constantly (about 4 minutes).
Add the flour, stir to blend and cook for 3 minutes more.
Stir in the chicken broth and simmer gently for 20 minutes.
Keep pan partially covered.
Add the cream and cayenne pepper.
Heat and add salt to taste.

It is summer again and fishing season is in full swing. I have been out, fishing when I can get away from the kitchen. So I have been creating some new recipes and...
My mother used to make these cookies every year for the holidays, and it's nice to see they're on recipeland. Instead of hand molding the cookies into the acorn shape, she used to use a teaspoon to form the cookies. You still put the chocolate and nuts on the fat end of the cookie, but it's a little quicker to make them using the spoon.
