This is Pennsylvania Dutch baking at its simplest: a molasses filling swirled with buttery flour-sugar crumbs in a pastry crust. It’s a cousin of the classic shoofly pie, and it comes together with pantry staples you probably already have.

The crumb mixture gets pinched by hand until very fine. Flour, sugar, and butter worked between your fingers create those sandy, streusel-like crumbs that bake into the filling and form a crust on top.

Beating the baking soda into the molasses and boiling water is the step that gives this pie its lift. The mixture foams up dramatically. That foam is carbon dioxide from the soda reacting with the acidic molasses, and it’s what keeps the filling from baking into a dense, flat slab.

Spooning the crumbs into the foamy molasses and mixing them in creates layers as it bakes. Some crumbs sink, some float, giving you a gooey bottom, a cakey middle, and a crumbly top.

Chef Tips

  • Use a deep pie pan. The foamy filling rises during baking and a shallow pan means overflow and a smoky oven.
  • Mix the crumbs into the filling gently. Heavy stirring knocks out the foam you just worked to create.
  • Bake at the lower temperature the recipe calls for. Molasses burns easily and turns bitter at high heat.

Variations

  • Wet-bottom shoofly: Pour the molasses liquid in first, then top with crumbs instead of mixing them together for a gooier bottom layer.
  • Spiced version: Add a pinch of cinnamon, ginger, and cloves to the crumb mixture for a warmer, more aromatic pie.
  • Brown sugar swap: Use dark brown sugar instead of white for an even deeper molasses flavor throughout.

Directions

Mix the first 3 ingredients together, using the hands, and pinching mixture until very fine.

Add the water to the molasses and soda and beat until this is foamy and rises.

Pour this into a pie pan lined with pastry (a deep pan is preferable) and taking a spoon, mix the above crumbs well into the molasses filling.

Bake at 325℉ (160℃) for 30 minutes.
