45 minWeeknight dinners don’t get much easier than this: one skillet, 45 minutes, and a hearty plate of beef and rice that the whole family will clear without complaint.
Bacon gets the pan started with a layer of smoky flavor, then ground beef and onion brown right in those drippings.
Frozen broccoli and cream of mushroom soup come together into a quick, creamy sauce, and instant rice soaks it all up while the pan sits covered off the heat for just five minutes.
It’s the kind of no-fuss cooking that tastes way better than the effort suggests.
Kitchen Tips
- Use the bacon drippings to brown the beef. That’s where most of the flavor lives, so don’t drain them
- Frozen broccoli works best here since it cooks through in the short simmer time without going mushy
- Let the rice rest the full 5 minutes off heat with the lid on. Lifting the lid too early means crunchy, undercooked grains
