Bless its heart, congealed salad is one of those Southern classics that sounds a little wild on paper but absolutely delivers at the table.

Lime Jello gets melted with marshmallows into a sweet, wobbly base, then folded together with whipped cream, crushed pineapple, chopped pecans, maraschino cherries, and yes, grated cheddar cheese.

That cheese might raise an eyebrow, but trust the generations of Southern grandmothers who put it there. The salty, sharp bite against all that fruity sweetness is what makes this salad unforgettable.

Kitchen Tips

  • Let the Jello mixture set to a soft congeal (thick but not firm) before folding in the other ingredients. This keeps everything suspended instead of sinking to the bottom.

Directions

Melt marshmallows in water.

Add lime jello. Set to soft congeal.

Fold in whipped cream or Cool Whip and remainder of ingredients and refrigerate.
