| 1 1/2 | cups | chicken broth | |
| 1/2 | cup | sweet yellow bell peppers | cut in strips |
| 1/2 | cupred | sweet bell peppers | cut in strips |
| 1/2 | cup | green bell peppers | cut in strips |
| 1 1/2 | cups | minute rice | |
| 1 1/2 | cups | chicken breasts | cubed |
| 1 | tablespoon | dijon mustard | |
| 1 | teaspoon | honey | |
| 1/4 | cup | scallions, spring or green onions | thinly sliced |
Bring broth and peppers to a boil in a saucepn.
Stir in rice.
Cover and remove from heat.
Let stand for 5 minutes, or until all liquid is absorbed.
While rice is standing combine chicken, mustard and honey.
Stir chicken mixture and green onions into rice and heat through.

I didn't have high expectations with this one, but, thus far, it has been my favorite recipe I have gotten from this site. My family enjoyed it very much also. Very quick and easy, wonderful taste. Don't think this will fill you though, it's more of a side dish than a main dish in our opinion. Wonderful! Thanks!
