| 1 1/4 | cup | rice | converted |
| 1/2 | cup | butter | or margarine, melted |
| 2 1/2 | cups | chicken broth | up to 3 cups |
| 3 | cups | chicken | cooked, chopped (to 4 cups) |
| 2 | each | mushrooms, canned | canned, drained, sliced (4 oz) |
| 6 | tablespoons | soy sauce | |
| 8 | each | scallions, spring or green onions | chopped |
| 2/3 | cups | almonds | slivered |
Mix rice with melted butter or margarine in crockpot. Stir to coat rice thoroughly. Add all remaining ingredients, except slivered almonds and 2 tablespoons green onions. Stir well. Sprinkle reserved almonds and green onions over top. Cover and cook on Low 7 to 9 hours, High 3 to 4 hours.

Last Christmas was a weird experience in itself. First of all, as a college student you get a longer Christmas break because you finish exams early....
This is an excellent dish. I put in 1 lb. of ground beef and 1 package of rigatoni and substituted 2 green bell peppers instead of mushrooms. I added one can of diced Italian tomatoes. Came out great. Makes a lot, but is very good.
