A coffee soda is what soda jerks served between the wars when the espresso machine wasn’t a fixture in every cafe. Chilled double-strength coffee sweetened with a touch of sugar, smoothed with half and half, then crowned with a scoop of coffee ice cream and topped off with seltzer to wake up the whole glass.

The trick is the double-strength coffee. Regular brewed coffee turns watery the moment ice cream and seltzer hit it. Brew it twice as strong (or use cold-brew concentrate) so the coffee flavor still leads the show after dilution.

Layer in this exact order: coffee mixture first, ice cream scoop second, seltzer third. Pouring the soda over the ice cream creates the foamy creme-topped float that defines the drink.

Garnish with whipped cream, a maraschino cherry, and chocolate curls for the full diner-counter treatment.

Pro Tips

  • Brew the coffee at least 4 hours ahead and chill it. Hot coffee melts the ice cream into a slurry instantly.
  • Use a tall narrow glass. The shape concentrates the foam and keeps the drink colder longer.
  • Don’t stir after adding the seltzer. Stirring kills the bubbles and you lose the fizzy lift.
  • Coffee ice cream beats vanilla here. The double-coffee hit is what makes this drink memorable; vanilla just tastes like watered-down latte.

Variations

  • Add a shot of coffee liqueur (Kahlua or Tia Maria) for a boozy after-dinner version.
  • Swap coffee ice cream for chocolate ice cream for a mocha float.
  • Use cold-brew concentrate instead of brewed coffee for a smoother, less acidic result.

Directions

Combine the coffee and sugar.

Blend in the half and half.

Fill 4 soda glasses halfway with the coffee mixture, add a scoop of ice cream and fill the glasses with soda.

Garnish as desired with whipped cream, cherries, chocolate curls or cocoa
