These chicken wings trade the usual buffalo or BBQ formula for something more interesting. Coffee liqueur (Kahlua, or any similar) gets reduced into the sauce, where its mellow coffee bitterness deepens the barbecue flavors and creates a complex, smoky-sweet glaze that’s unlike anything you’ll find at a chain restaurant.

Reducing the coffee liqueur by half is the key step. The alcohol cooks off, the coffee flavor concentrates, and you’re left with a syrupy, intensely flavored base that grips the wings during marinating. Don’t skip the reduction.

The spice blend (chili powder, cumin, hot sauce, Worcestershire) layers smoky-spicy depth over the coffee base. Honey added at the end brings sweetness without going cloying. The whole sauce reads as sophisticated cocktail-bar food rather than typical wing-night fare.

The overnight marinade is worth the time. The flavors penetrate fully, making every bite taste seasoned to the bone rather than just glazed on the surface. A one-hour room-temperature marinade works in a pinch but doesn’t deliver the same depth.

The broiler-then-bake method is the trick for crispy wings without deep frying. Five minutes under the broiler crisps the skin, then 15 minutes at 350°F (175°C) cooks them through gently. Brush with extra sauce during the bake for that lacquered look.

Serve with celery sticks, blue cheese dip, and a strong martini or coffee-spiked cocktail.

  • Remove the wing tips and split at the joint for proper drum-and-flat pieces.
  • Pat wings dry before marinating so the sauce sticks better.
  • Reserve some unused sauce for brushing during the bake; never reuse marinade that touched raw chicken.

Directions

In a 2 Qt. saucepan melt butter; sauté garlic and onion over medium heat for 3 minutes.

Add cumin and chili powder and cook, stirring constantly for 2 minutes.

Blend in Coffee Liqueur and cook to reduce liquid by one-half.

Stir in hot sauce, Worcestershire, barbeque sauce and salt.

Simmer 5 minutes.

Remove from heat and add honey.

Set aside and allow to cool.

Prepare chicken wings by removing and discarding the tips.

Divide the wings in half at the remaining joint.

Marinate the wings in the cooked sauce for 1 hour at room temperature, or overnight in the refrigerator.

To cook, place the marinated wings on a broiler pan, sprinkle with salt and pepper and broil 5 minutes, turn and brush with the remaining sauce and bake at 350℉ (180℃) for 15 minutes.

Serve hot.

Wings can be prepared a day ahead and can be reheated in the oven.
