Coconut Rice

A simple but tasty rice dish that's made with coconut milk.

Ingredients

3cups rice long grain
4cups coconut milk
1 1/2cup water
1/2teaspoon salt
1teaspoon sugar

Directions

Wash the rice & drain. Place in a heavy pot, add the milk, water, salt & sugar, mix, cover & bring to a boil. Let it boil for 3 to 5 minutes. Reduce the heat to low & cook for 20 minutes, until done.

A richer flavour can be obtained by increasing the amount of coconut milk & decreasing the amount of water.

Serve with any type of curry.

very good, one of my favorite thai restaurants is 'the king and i' in edmonton canada. they serve the best coconut rice i've ever had. this recipe comes very close to it, however when i made it , i added 2 1/2 t. spoons of sugar instead of one. still not quite as sweet , next time i'll add three. thanx for the recipe.
