Lighter applesauce cinnamon waffles made with buttermilk, whipped egg whites, and a splash of maple syrup. Cinnamon-sugar dusted on top, optional raisins folded into the batter.

The applesauce works as a partial fat replacement (no oil or butter in the batter), keeping each waffle moist while pulling the calorie count down to almost nothing. The buttermilk reacts with the baking soda for serious lift, and the whipped egg whites add an airy texture you don’t get from a standard waffle batter.
Orange extract is the surprise ingredient. Just half a teaspoon adds a warm citrus undertone that plays beautifully with cinnamon and apple. Skip it and the waffles taste flat by comparison.
Mix dry into wet just until moistened. Lumps in the batter are fine and even desirable. Overmixing develops gluten and yields chewy, dense waffles instead of light ones.

Directions
Prepare waffle iron with cooking spray and heat up.
In a small bowl, combine the 3 tablespoons sugar and ½ teaspoon cinnamon; set aside.
In a mixing bowl, combine flour, baking powder, baking soda, remaining sugar and cinnamon.
In another mixing bowl, combine egg whites, buttermilk, applesauce, maple syrup, vanilla, orange extract, and raisins if desired.
Mix dry ingredients with wet ingredients just until moistened.
Pour enough batter to fill two-thirds of the waffle iron.
Cook until crisp and golden brown.
Set aside.
Repeat with remaining batter.
Sprinkle sugar and cinnamon mixture over waffles.
