A semi-homemade coffee cake using white cake mix and vanilla pudding for extra moisture. Swirled with cinnamon, cocoa, sugar, and chopped nuts, it bakes up rich and golden for brunch or weekend treats.

This is the kind of coffee cake that looks like you spent all morning baking, but the secret weapon is a box of white cake mix and instant vanilla pudding.

Sour cream keeps the crumb incredibly moist, while layers of cinnamon, cocoa, sugar, and chopped nuts create those gorgeous swirls that make every slice look different.

Don’t panic when it browns deeply in the oven. That’s exactly what it’s supposed to do.

Chef Tips

  • Use a bundt pan or tube pan for the best swirl presentation.
  • Let it cool in the pan for at least 15 minutes before turning out, or it may crumble.
  • Swap the chopped nuts for pecans or walnuts depending on what you have on hand.
