No-bake church window cookies with mint and regular chocolate chips, colored marshmallows, nuts, and flaked coconut. Slice-and-serve treats that look like tiny stained glass rounds.

20 minThis twist on the classic church window candy adds a minty surprise. Both mint chocolate chips and regular chocolate chips melt together with margarine to create a double-chocolate base with a cool, refreshing edge.
Fold in colored mini marshmallows and chopped nuts, then roll the mixture into logs on a bed of flaked coconut. The coconut clings to the outside and gives each slice a snowy border around the colorful stained-glass center.
No oven, no fuss. Just chill until firm, slice into rounds, and arrange them on a platter. They disappear fast at cookie swaps and holiday parties.
Kitchen Tips
- Cool the melted chocolate before stirring in the marshmallows. You want them whole and colorful, not melted into the mix.
- Pack the coconut layer thick on the wax paper so the logs get an even coating all around.
- Use a sharp knife and wipe the blade between slices for the cleanest presentation.
- Store in the fridge. They soften quickly at room temperature.

Directions
Heat first 3 ingredients just enough to melt chips, let cool.
The add marshmallows and nuts.
Stir until marshmallows and nuts are covered with chocolate mixture.
Put flaked coconut on wax paper and put half of cookie mixture in a line and roll.
Repeat with other half of mixture.
Put in refrigerator until hardened, cut into cookies.

thanks so very much...i lost all my recipes in a house fire back in june of this year....i went to make my usual xmas cookies and i forgot how many choc chips and how much butter to put in....thanks ...you saved the day....MERRY XMAS
