Four-ingredient no-bake chocolate butterscotch drops with oats and salted peanuts. Melt, stir, drop, and chill. Makes 30 cookies in about 20 minutes.

When you need cookies and you need them now, these no-bake drops are your best friend.

Four ingredients. One double boiler. Zero oven time. Semi-sweet chocolate and butterscotch chips get melted together into a glossy, golden-brown pool, then stirred with quick oats and salted peanuts.

Drop them by the spoonful onto wax paper, chill until set, and you’re done.

The butterscotch adds a caramel sweetness that plays off the chocolate, the oats give them body, and the salted peanuts bring that salty crunch that keeps you reaching for just one more.

Kitchen Tips

  • Melt over hot, not boiling, water to prevent the butterscotch chips from seizing up and turning grainy
  • Stir the oats and peanuts in quickly while the chocolate is still warm and fluid

Directions

Melt chocolate and butterscotch pieces in top of double boiler over hot (not boiling) water; stirring occasionally.

Remove from heat; stir in oats and peanuts.

Drop by teaspoonfuls onto waxed paper.

Chill.
