Four ingredients. One double boiler. Zero oven time. Semi-sweet chocolate and butterscotch chips get melted together into a glossy, golden-brown pool, then stirred with quick oats and salted peanuts.
Drop them by the spoonful onto wax paper, chill until set, and you’re done.
The butterscotch adds a caramel sweetness that plays off the chocolate, the oats give them body, and the salted peanuts bring that salty crunch that keeps you reaching for just one more.
Kitchen Tips
- Melt over hot, not boiling, water to prevent the butterscotch chips from seizing up and turning grainy
- Stir the oats and peanuts in quickly while the chocolate is still warm and fluid
- Use salted peanuts, not unsalted; the salt contrast is what makes these addictive
- Store in the fridge in a single layer; they’ll soften at room temperature
