50 minThink of these as a chocolate-spiked pecan pie in bar form. A shortbread crust with cinnamon and chopped pecans gets pressed into the pan and pre-baked until golden. Then a warm topping of melted chocolate, brown sugar, eggs, and vanilla gets poured right over it and goes back in the oven.
The crust stays firm and crumbly underneath while the topping sets into something dense and fudgy. That contrast is what makes these bars disappear from a plate faster than brownies at a bake sale.
Melt the chocolate and butter together over low heat and stir constantly. Chocolate scorches fast and there’s no coming back from it. Pull the pan off the heat before mixing in the eggs and brown sugar so you don’t accidentally cook the eggs.
Chef Tips
- Press the crust firmly and evenly. Thin spots bake faster and turn hard while thick spots stay doughy.
- Let the bars cool completely before cutting. The topping needs time to set or you’ll get a gooey, messy slice.
- A light dusting of powdered sugar right before serving hides any cracks in the topping and looks polished.
- Line the pan with parchment for easy lift-out and cleaner cuts.
Variations
- Use walnuts instead of pecans and add a tablespoon of espresso powder to the topping for a mocha version.
- Sprinkle flaky sea salt over the topping before baking for a sweet-salty finish.
- Drizzle melted white chocolate over the cooled bars for extra visual appeal.
