Chocolate Mallow Cake

Microwave chocolate cake topped with gooey halved marshmallows and smothered in rich chocolate frosting. Ready in under an hour with zero oven time. A kid-friendly crowd-pleaser.

The whole thing cooks in the microwave in about 11 minutes, then you press halved marshmallows cut-side down onto the warm cake so they get soft and sticky.
Once it cools, a thick chocolate frosting made from unsweetened chocolate, butter, and powdered sugar blankets everything in a fudgy layer.
Cut between the marshmallows for built-in portions, and try not to eat three slices before dinner.
Pro Tips
- Rotate the dish as directed. Microwaves heat unevenly, and turning prevents raw spots in the center.
- Press the marshmallows on after the cake has stood for 3 to 4 minutes, not immediately. Too hot and they’ll dissolve into the batter instead of sitting on top.
- Let the frosted cake rest for a few hours before slicing. The frosting firms up and the marshmallows set, making clean cuts much easier.
- Sour cream in the batter is the secret weapon here. It keeps the crumb moist even after microwaving, which tends to dry things out.
Ingredients
Directions
Place all ingredients, except marshmallows in mixing bowl.
Blend at lowest speed, then beat at medium speed 2 minutes.
Spread batter in 10 x 6 in baking dish .
Microwave at 50% (Medium) 6 minutes.
Rotate ¼ turn every 3 minutes.
Increase power to high.
Microwave 2 to 5 minutes until done.
Let stand directly on countertop 5 to 10 minutes.
Place marshmallows, cut side down and close together on cake after it has stood 3 to 4 minutes.
Cool cake and frost with Chocolate Frosting.
Cut between marshmallws.
Cake slices more easily if allowed stand several hours after frosting.
Frosting: In small mixing bowl, combine chociolate, butter and milk.
Microwave at 50% (Med.) 3 to 4 minutes or until chocolate is soft and mixture is thick, stirring after half the time. Stir in remaining ingredients. Let stand 5 to 10 minutes. Beat until smooth and of spreading consistancy, 1 to 3 minutes.
