3½ hrsFour ingredients, no oven, no skill required. Ripe banana coins get dunked in melted semi-sweet chocolate (thinned with a splash of canola oil so it pours smoother and sets with a clean snap), then immediately rolled in whatever toppings are on hand: chopped nuts, shredded coconut, crushed pretzels, sprinkles, granola, freeze-dried strawberries. The topping bar is half the fun.
Set them on foil and freeze for 3 hours. What you pull out is a cold, chocolate-cracked, tropical-sweet bite with a creamy frozen banana core that eats like banana ice cream in a single pop. Bananas go chewy-creamy when frozen rather than icy.
Make a big batch and stash them in a ziplock for up to a month. A solid freezer-ready dessert for summer, kids’ lunches, or that 9 p.m. sweet craving when you don’t want to eat a whole pint of ice cream.
Pro Tips
- Use ripe, spotty bananas, not overripe. Very ripe bananas turn mushy when frozen. Spotty yellow gives the best texture.
- The canola oil in the chocolate is a must. Straight chocolate sets hard and cracks off the banana. The oil keeps the shell pliable and glossy.
- Let the melted chocolate cool for the full 15 minutes. Hot chocolate will melt the banana surface on contact, making it slimy.
- Work fast once you start dipping. The bananas warm up the chocolate and thin it out. Batches of 6 to 8 at a time is the sweet spot.
Variations
- Use white chocolate or dark chocolate (70%+) for different flavor profiles.
- Drizzle with peanut butter or almond butter before freezing for a fuller snack.
- Thread slices onto popsicle sticks before dipping for chocolate banana pops.
