20 minBefore you scroll past, hear this out: mayonnaise makes some of the fudgiest cookies you’ll ever eat. And no, you can’t taste it.
Mayo is just eggs, oil, and vinegar, so it does the job of multiple ingredients in one scoop. Mixed with chocolate fudge cake mix and chocolate pudding mix, it creates a dense, truffle-like dough that barely needs any effort to pull together.
Ten ounces of semisweet chocolate chunks and chopped walnuts round it out. Five ingredients. Twenty minutes start to finish. No mixer, no creaming butter, no separating eggs.
Kitchen Tips
- Use full-fat mayonnaise only. Light or fat-free versions have fillers and extra water that will throw off the texture completely.
- Scoop with a 2-tablespoon measure and roll into balls for even baking. The dough is sticky, so lightly oil your hands if needed.
- Pull them at 12 minutes even if they look soft. These cookies firm up significantly as they cool. Overbaking turns fudgy into dry.
