Think of these as the love child of a rice crispy treat and a chocolate truffle. Melted marshmallows and semi-sweet chocolate chips create a fudgy base, while crisp rice cereal adds snap and shredded coconut brings a chewy, toasty sweetness.

Everything melts together in the microwave in under six minutes. The trick is working quickly once you stir in the cereal and coconut, because the marshmallow mixture sets fast. A buttered spatula is your best friend for pressing it evenly into the pan before it firms up.

Directions

Line a 13 by 9 inch pan with foil.

Grease or spray with cooking spray.

Combine marshmallows, butter, and chocolate in a microwavable bowl.

Microwave for 4 to 6 min, checking and stirring every 2 min. until melted.

Stir in rice cereal and coconut.

Spread in pan quickly using a buttered spatula.

Chill. Cut into small bars, finger size.
