| 6 | tablespoons | butter | , softened |
| 1 1/2 | cups | sugar | divided |
| 1 | each | egg yolk | |
| 2 | teaspoons | vanilla extract | |
| 1/2 | cup | buttermilk, low-fat | |
| 1 3/4 | cups | bananas | ripe, pureed |
| 1 3/4 | cups | cake flour | |
| 1/2 | cup | cocoa powder | preferably dutchprocess |
| 1 | teaspoon | baking powder | |
| 1 | teaspoon | baking soda | |
| 1/2 | teaspoon | salt | |
| 3 | each | egg whites | |
| 2 | tablespoons | powdered sugar |
Mix butter, 1-1/4 cups granulated sugar, egg yolk and vanilla together in bowl with electric mixer until light and fluffy.
Add buttermilk and banana. Mix well. Sift together flour, cocoa, baking powder, baking soda and salt.
Gradually add flour mixture to batter.
Mix until very smooth.
Beat egg whites in clean bowl until foamy.
Gradually add remaining 1/4 cup granulated sugar and continue beating until whites are soft and moist, yet hold their peaks.
Gently fold whites into batter.
Transfer batter to greased and lightly floured 9andquot; square cake pan.
Smooth surface with spatula. Bake on center oven rack at 350 until wood pick inserted in center comes out clean, about 1 hour.
Let cool on rack at least 30 minutes.
Shake powdered sugar through a fine sieve over cake before serving (it tastes best when served the day it's baked).
Note: because the batter is heavy, the cake bakes more quickly around the edges and is slightly lower in the center.
Makes 8 servings.

According to an Irish myth, one day a man known as "Stingy Jack" for his miserly inclinations had a drink with the devil. True to his name, Jack convinced the...
This white bread recipe is great. It is absolutely delicious and it is a very large loaf. I found that I had to add extra flour to the dough while it was kneading as the dough seemed wet. The only problem I had is that my 1.5 to 2 lb bread machine could not handle the size of the bread. It rose so high that the top touched the lid and that portion didn't cook completely. (That may have been because I needed to add extra flour though). Otherwise, I recommend this recipe very highly. When I make it next time, I'll probably just bake it the traditional way after the machine kneads the dough. *****
