Chocolate Banana Split Streusel Cake

A chocolate banana bundt cake with two layers of streusel filling made from brown sugar, chocolate chips, pecans, and allspice. Moist from sour cream and mashed bananas, dusted with powdered sugar.

90 minThis cake has a hidden talent. Slice into the gorgeous bundt and you’ll find two ribbons of chocolate streusel running through the center: brown sugar, chocolate chips, chopped pecans, and a whisper of allspice all crumbled together.
The cake itself is deeply chocolatey from cocoa powder, kept incredibly moist by mashed ripe bananas and sour cream. It’s banana bread meets coffee cake meets chocolate bundt, and somehow the mashup works brilliantly.
Dust the top with powdered sugar and bring it to brunch, a potluck, or just your kitchen counter where it won’t last long.
Kitchen Tips
- Spread the batter layers carefully over the streusel so the filling stays in distinct ribbons rather than mixing in
- Grease the bundt pan generously, especially the center tube and all the fluted edges
- Cool in the pan for 15 minutes before unmolding; this gives the cake structure so it doesn’t break
- Use very ripe bananas for maximum sweetness and moisture in the crumb

Directions
Preheat oven to 350℉ (180℃).
In a large bowl, beat together butter and granulated sugar with an electric mixer on medium speed until well mixed, 1 to 2 minutes.
With mixer on low, beat in bananas, cocoa, and vanilla until well blended.
With mixer on medium, add eggs one at a time, beating well after each addition.
Sift together flour, baking powder, baking soda, and salt.
Beat into chocolate mixture alternately with sour cream just until combined.
Spread one third of batter evenly in well-greased 12-cup bundt pan.
Top with half of Chocolate Streusel Filling.
Carefully spread half of remaining batter over filling.
Top with remaining streusel, then remaining batter, spreading evenly.
Bake 50 to 55 minutes, or until a cake tester inserted in center comes out clean.
Let cool in pan 15 minutes then unmold onto rack and let cool completely.
Sift powdered sugar over top.
CHOCOLATE STREUSEL FILLING: In a medium bowl, combine butter, brown sugar, flour, chocolate chips, pecans and allspice.
Mix until thoroughly combined.
