No-bake chocolate cream cheese pie with a chocolate graham cracker crust. Melted chocolate chips, whipped cream, and fluffy egg whites create a mousse-like filling that chills overnight.

40 minThis is the pie that ruined every other chocolate pie for me. A silky, mousse-like filling of melted chocolate chips, whipped cream cheese, and folded-in whipped cream and egg whites, all nestled inside a chocolate graham cracker crust.
No oven required for the filling. You melt the chips, whip the components, fold everything together, and let the fridge do the rest overnight. When you slice into it the next day, the texture is somewhere between cheesecake and chocolate mousse.
Brown sugar in both the filling and the crust gives it a caramel depth that straight white sugar just can’t match.
Kitchen Tips
- Use the melted chocolate within 10 minutes; wait too long and it stiffens and won’t blend smoothly into the cream cheese
- Beat the egg whites to stiff, glossy peaks before folding; under-beaten whites deflate the filling
- Fold gently with a rubber spatula to keep as much air in the filling as possible; that’s what gives it the mousse texture
- Chill the crust before filling so it firms up and holds its shape when sliced
Ingredients
Directions
Melt chocolate chips over hot water.
Let cool about 10 minutes. (Any longer and they will stiffen) Whip cream cheese and salt until light and fluffy.
Gradually add ½ cup brown sugar; cream this thoroughly.
Blend in egg yolk; one at a time, beating well after each addition.
Add vanilla and chocolate to mixture and beat thoroughly.
Beat egg whites into soft peaks.
Gradually add remaining sugar and beat until stiff and glossy.
Fold chocolate mixture into egg whites.
Fold in whipped cream.
Spoon into crust (follows) and chill overnight.
Chocolate Crumb Crust Combine crumbs and sugar, add chocolate and butter, blending thoroughly.
Pat mixture to the bottom and sides of 9 inch pie plate.
Chill before adding filling.
