| 1 | pound | ground beef, lean | |
| 1 | tablespoon | butter | or margarine |
| 1 | medium | onion | finely chopped |
| 1 | medium | sweet bell pepper | green or red, finely chopped |
| 16 | ounces | kidney beans, canned | drained |
| 16 | ounces | tomatoes, canned | drained, chopped |
| 8 | ounces | tomato sauce | |
| 1 | clove | garlic | minced |
| 1 | small | bay leaf | |
| 1/2 | teaspoon | salt | |
| 1 | teaspoon | black pepper | |
| 1/4 | teaspoon | cumin | |
| 1/4 | teaspoon | basil | dried |
| 1/4 | teaspoon | oregano leaves | crushed |
| 2 to 3 | teaspoons | chili powder |
In a heavy pot, melt butter.
Crumble meat into pot. Cook a few minutes until meat is no longer pink. Remove.
To the pot, add onion and pepper.
Cook a few minutes, stirring, until vegetables are soft.
Add meat. Stir to combine.
Add remaining ingredients.
Heat to a boil. Reduce heat.
Cook, stirring occasionally, at least 45 minutes.
Remove bay leaf.
Serve immediately.

Lovely mingle of flavours. I toasted the walnets. Used dried tarragon but soaked in the oils w/orgainc cider vinegar in advance. Oh yeah and added 1 clove of finely minced garlic. A big hit with or without the garlic. High class side dish using the fresh beans from my local country road farmer.
