Ingredients

5each onions medium, diced
4stalks celery chopped
4each garlic crushed
3Cans tomato sauce large
3Cans tomatoes large, stewed
3Cans red kidney beans large
12ounces green chili pepper bo ortega
1can salsa
3ounces chili powder watkins
5pounds ground chuck (ground beef)
1Bottle red hot pepper sauce (eg. Tabasco) red devil

Directions

Fry Onions, Celery and garlic until onions are transluscent.

Put in large Cast iron or stainless pot.

Brown Ground Chuck in skillet. Drain off liquid, and put in pot.

Quarter tomatoes, and add to pot. Add kidney beans and tomato sauce to pot .

Bring to boil, turn down heat and simmer slowly for 1hours, stirring often, to keep from sticking.

Add green chili salsa, salt, chili powder, hot sauce (to taste).

Simmer for two more hours.
