30 minThere’s something wildly addictive about the collision of sweet fruit and fiery heat on tender chicken.
This recipe simmers boneless chicken breasts in pineapple juice spiked with crushed red pepper and garlic, then builds a sticky, glossy sauce with strawberry jam and golden raisins.
The whole thing comes together in 30 minutes flat, making it a weeknight hero that tastes like you spent all afternoon in the kitchen.
Finish with a scatter of fresh green onion strips for color and crunch.
Chef Tips
- Pat your chicken breasts dry before adding them to the skillet so they don’t dilute the sauce.
- Let the cooking liquid reduce fully before adding the cornstarch mixture. A properly reduced sauce concentrates all that fruity, spicy flavor.
- Swap strawberry jam for apricot preserves if you want a more tropical spin.
