60 minThere’s something deeply satisfying about tossing chicken and potatoes into a hot cast iron skillet and letting the butter do its thing.
This is the kind of recipe your mama would make on a Tuesday night, filling the whole house with the warm scent of oregano and browning onions.
The potatoes crisp up on the edges while the chicken stays juicy under the lid, and a final shower of fresh parsley brings everything to life.
Kitchen Tips
- Use a heavy cast iron skillet for the best browning and even heat distribution.
- Turn the chicken and potatoes frequently so they develop a golden crust on all sides without sticking.
- Don’t add the oregano and Italian seasoning until halfway through cooking so the herbs stay fragrant rather than bitter.
- Cut your potatoes into even 1-inch cubes so they cook at the same rate as the chicken.
