Sometimes you want a soup that’s light, fast, and packed with flavor without weighing you down. This one checks every box.

Thinly sliced chicken breast, chopped ham, courgettes (zucchini), mushrooms, and onions simmer in chicken stock for just five minutes. A quick stir of soy sauce blended with cornstarch thickens everything into a glossy, savory broth that’s closer to a Chinese-style soup than a chunky stew.

It’s remarkably low in calories but still satisfying. The soy sauce adds an umami depth that makes the simple ingredients taste much more complex than they are.

Kitchen Tips

  • Slice the chicken as thin as you can. Thin strips cook through in the five-minute simmer time. Thick pieces won’t be done in time.
  • Blend the cornstarch into the soy sauce before adding. This prevents lumps. Add the slurry while stirring constantly and the soup will thicken evenly in seconds.
  • Serve immediately. This soup is best fresh off the stove. The vegetables lose their bite and the broth gets starchy if it sits too long.

Directions

Place chicken courgettes, mushrooms ham onions and stock in a pan.

Bring to the boil.

Reduce heat and simmer uncovered for 5 minutes.

Blend soy sauce with the corn flour and add to the pan stirring constantly until the soup thickens.

Serve immediately.
