| 1 | each | chicken breast | fillet, skinned and thinly sliced |
| 2 | medium | courgettes | |
| 1 1/2 | ounces | mushrooms | |
| 1 1/2 | ounces | ham | chopped |
| 2 | each | onions | chopped |
| 3/4 | pint | chicken broth | made with liquid concentrate |
| 2 | teaspoons | soy sauce, light | |
| 1 | teaspoon | corn flour |
Place chicken courgettes, mushrooms ham onions and stock in a pan.
Bring to the boil.
Reduce heat and simmer uncovered for 5 minutes.
Blend soy sauce with the corn flour and add to the pan stirring constantly until the soup thickens.
Serve immediately.

This rice casserole was a big hit with my family! The only problem was that after 45 minutes the rice wasn't cooked at all. I baked it, covered, for another 30 minutes, and it was perfect. I think the next time I would cook it with covered. The taste was just excellent!
