Chicken Spectacular is the classic Southern potluck casserole. Wild rice, cream of celery soup, green beans, water chestnuts, and cheddar bake into a crowd-sized dish that feeds 12 with barely any prep.

If you’ve ever been to a church supper in the South, you’ve probably already eaten this casserole and gone back for seconds.

Chicken Spectacular earns its name by being absurdly easy and feeding a crowd. Mix diced chicken with wild rice, cream of celery soup, French-style green beans, crunchy water chestnuts, and a swirl of mayo.

Pimento adds a pop of color and sweetness, then a layer of grated cheddar goes on top and melts into a golden blanket in the oven.

Thirty minutes from oven to table and it serves 12. That’s potluck royalty.

Chef Tips

  • Cook the wild rice a day ahead and refrigerate to make assembly even faster
  • French-style green beans work best here; their thin cut blends into the casserole more evenly
  • Let the casserole rest 5 minutes after baking so it sets up and slices cleanly

Directions

Heat oven to 350℉ (180℃).

Mix all ingredients together, pour into greased 3 quart casserole and spread grated cheese over top.

Bake about 25 to 30 minutes.
