Chicken Spectacular earns its name by being absurdly easy and feeding a crowd. Mix diced chicken with wild rice, cream of celery soup, French-style green beans, crunchy water chestnuts, and a swirl of mayo.
Pimento adds a pop of color and sweetness, then a layer of grated cheddar goes on top and melts into a golden blanket in the oven.
Thirty minutes from oven to table and it serves 12. That’s potluck royalty.
Chef Tips
- Cook the wild rice a day ahead and refrigerate to make assembly even faster
- French-style green beans work best here; their thin cut blends into the casserole more evenly
- Let the casserole rest 5 minutes after baking so it sets up and slices cleanly
