Chicken Soup with Guacamole

Ingredients

2 quarts soup, chicken and rice hearty, with large chunks of chicken
2 medium avocado
1 la tomato diced
14 each scallions, spring or green onions cliced
1 each serrano chiles minced
2 tablespoons cilantro chopped
2 each lime mexican

Directions

Peel and slice the avocados, and cut into 1 inch pieces.

The chiles are best chopped fine in a blender.

Halve the limes.

Mash avacadoes with other ingredients.

Pour soup into hot earthenware cazuelas, or onion-soup pots, and spoon on the uncooked topping.

Serve with hot tortillas.

Crock Pot Pizza

This is an excellent dish. I put in 1 lb. of ground beef and 1 package of rigatoni and substituted 2 green bell peppers instead of mushrooms. I added one can of diced Italian tomatoes. Came out great. Makes a lot, but is very good.
