This stew means business. Three proteins, homemade stock, and enough substance to feed ten hungry people. It’s rated a perfect 5 stars for good reason.

A whole chicken gets simmered until it’s falling off the bone, creating a rich stock base. Hot Italian sausage links are boiled, then pan-fried for a crispy exterior. Bacon gets cooked until shattering-crisp, and the garlic sizzles in just a teaspoon of those drippings.

Everything meets in a Dutch oven with crushed tomatoes, tomato sauce, oregano, and parsley. Elbow macaroni goes in at the end, turning this from a stew into something closer to the most loaded, meaty soup you’ve ever had.

Pro Tips

  • Chill the stock before skimming. Fat solidifies on the surface when cold, making it easy to lift off in sheets. Trying to skim hot stock is a frustrating, greasy game.
  • Boil the sausages first, then pan-fry. Boiling cooks them through safely, and the pan-fry step adds a caramelized crust that holds up in the stew without turning soft.
  • Add the macaroni in the last 10 minutes. It just needs to heat through since it’s already cooked. Simmering it too long turns it mushy and starchy.

Directions

Place chicken and water in a large kettle; bring to a boil.

Reduce heat; cover and simmer until chicken nearly falls from the bones.

Remove chicken from stock.

Chill stock. Remove chicken from bones and cube; set aside.

Puncture skins of sausages; cover with water in a small saucepan and boil until fully cooked, 20 to 30 minutes.

Drain; pan-fry sausages until browned.

Cool and cut into bite-size pieces; set aside.

In a Dutch oven, cook bacon until crisp.

Drain, reserving 1 teaspoon drippings. Cool and crumble bacon; set aside.

In the drippings, sauté garlic.

Skim fat from the chicken stock; add 5 cups to Dutch oven.

Add chicken, sausage, bacon, parsley and oregano.

Cover and simmer 10 to 15 minutes.

Add tomatoes, tomato sauce, macaroni, salt and pepper; simmer 10 minutes more.
