Chicken Dish

Very good. I used cooked chicken breast and canned chicken rather than the baked and deboned. In the future, I would not put the cheese on at the beginning of the baking. Rather I would bake the dish for about 25-30 minutes then top with the cheese to melt the last 5. I felt that the cheese being on the top inhibited the rolls from baking completely. the edges that were not covered with cheese were very flaky while the cheese covered areas seemed a bit soggy.

Ingredients

1each chicken baked and de-boned
1can soup, cream of chicken
1/3cup mayonnaise
1cup sour cream
1each onion medium-sized, chopped
2each celery stalks sliced 1/8 inch thick
12each mushrooms sliced
1can water chestnuts drained
1can crescent rolls
1cup monterey jack cheese shredded
3teaspoons butter melted
1/2cup pine nuts or sliced almonds

Directions

Cream together the mayo, soup and sour cream.

Add the chicken, and the vegetables.

Microwave on high for 6 minutes.

Pour into a 9x13 inch baking dish.

Spread over top the cresent rolls to make a crust.

Top with shredded cheese, drizzle butter over top and sprinkle with nuts.

Bake at 350 degrees F for 30-40 minutes until cooked and browned.

Cool for 5 minutes, slice down the middle and then three cuts to make a total of eight peices.

Serves 4 people, 2 slices each.

Pete & Shannon's Damn Good Chili

I have made this several times as written--always excellent. I now make a few modifications; 3 cloves garlic instead of powder, spicy Italian sausage instead of breakfast sausage, 2 cans chili beans and either omit jalapeno pepper or only use one.
