| 1/2 | each | celery | head, finely chopped |
| 110 | grams | walnuts | finely chopped |
| 2 | each | apples, tart | dessert, unpeeled and finely chopped |
| 450 | grams | chestnut puree | unsweetened |
| 450 | grams | sausage meat | |
| 225 | grams | bread crumbs, whole wheat | |
| 2 | large | eggs | beaten |
| 2 | tablespoons | parsley flakes | flat-leaf, finely chopped |
| 1 | x | salt and black pepper | fresh ground to taste |
| 450 | grams | chestnuts | vacuum-packed, quartered |
Heat the oil in a frying pan over a gentle heat.
Add the onion, celery, walnuts and apple and fry until golden and softened.
Transfer the mixture to a large bowl and add the remaining ingredients, mixing well.
Use the mixture to stuff the turkey.
Alternatively, the mixture can be cooked for about 30 minutes in a separate roasting tin.
This is the best one I have tasted, nuts mixed with parsley, whole wheat bread crusts, so great! I will do it more!

If you were a leprechaun what would use for an umbrella? I'll bet you never pondered that one huh? ...
The only thing that would make this better is an extra something to enhance the Mexican flavor--maybe more salsa, more spice? Otherwise very good and the family liked it and it makes for good leftovers.
