Ingredients

3 tablespoons olive oil
1 large onion finely chopped
1/2 each celery head, finely chopped
110 grams walnuts finely chopped
2 each apples, tart dessert, unpeeled and finely chopped
450 grams chestnut puree unsweetened
450 grams sausage meat
225 grams bread crumbs, whole wheat
2 large eggs beaten
2 tablespoons parsley flakes flat-leaf, finely chopped
1 x salt and black pepper fresh ground to taste
450 grams chestnuts vacuum-packed, quartered

Directions

Heat the oil in a frying pan over a gentle heat.

Add the onion, celery, walnuts and apple and fry until golden and softened.

Transfer the mixture to a large bowl and add the remaining ingredients, mixing well.

Use the mixture to stuff the turkey.

Alternatively, the mixture can be cooked for about 30 minutes in a separate roasting tin.

Mexican Shepard Pie

The only thing that would make this better is an extra something to enhance the Mexican flavor--maybe more salsa, more spice? Otherwise very good and the family liked it and it makes for good leftovers.
