What happens when a Waldorf salad meets a Jello mold? This gorgeous hybrid, that’s what.

Cherry-flavored gelatin sets up with all the classic Waldorf players inside: crisp chopped apples, crunchy celery, and toasted walnuts (or pecans if that’s your style).

A splash of lemon juice keeps the apples bright and adds a tart counterpoint to the sweet cherry base.

Unmold it onto a bed of lettuce leaves for a retro presentation that will have everyone at the table reaching for seconds.

  • Wait until the gelatin is partially set (thick and syrupy) before folding in the apples and celery so they stay suspended throughout

Directions

In medium bowl, pour boiling water over gelatin; stir until dissolved.

Add cold water and lemon juice; chill until partially set.

Fold in apples, celery and nuts.

Pour into lightly oiled 6-cup mold or 9-inch square baking pan.

Chill until set, 4 to 6 hours or overnight.

Unmold on lettuce leaves and garnish as desired.
