Two ingredients. Five minutes. Velveeta salsa dip stirred into hot pasta for an instant cheesy Mexican-style side dish. When you need dinner yesterday, this is the move.

Look, we’re not reinventing the wheel here. We’re just covering it in melted cheese.

Hot cooked pasta meets Velveeta salsa dip, and that’s it. Stir, serve, done.

It’s the fastest cheesy side dish you’ll ever make, and it hits that spicy, gooey, comfort food craving without dirtying more than one pot.

Top it with chopped peppers and fresh cilantro to make it look like you tried a little harder than you did.

Variations

  • Toss in leftover shredded chicken or seasoned ground beef to turn this into a full meal
  • Stir in a can of drained black beans and some frozen corn for a Southwestern twist
  • Add a squeeze of lime and a sprinkle of tajin for extra zing
