Sharp cheddar cheese and peanut butter get worked into butter and flour for a savory shortbread-style dough that’s salty, nutty, and impossibly rich.
Chill it, scoop it, bake until golden, and try to stop at three. You won’t.
Think of them as the sophisticated love child of a cheese cracker and a peanut butter cookie. They’re unreal with a cold beer or a glass of wine.
Pro Tips
- Chill the dough for a full hour so it’s firm enough to scoop cleanly
- Use the sharpest cheddar you can find for the most punch since mild cheddar will get lost
- Space them 2 inches apart on the sheet because they spread as they bake
- These get crispier as they cool, so don’t overbake them in the oven
Variations
- Roll the dough into a log, chill, and slice into rounds for perfectly uniform crackers
- Add a pinch of cayenne or smoked paprika for a spicy kick
- Press a pecan half into each cookie before baking for a Southern cocktail snack
