2 hrsY’all, this is one of those old-school Southern candy secrets that sounds completely wild until you taste it.
Process cheese melts down with butter into the silkiest, creamiest fudge base you’ve ever seen. Sift in cocoa and powdered sugar, fold in chopped nuts, and you’ve got a batch of chocolate fudge so smooth it’ll make your grandmother’s recipe jealous.
The cheese adds richness without any cheesy flavor whatsoever. Just pure, velvety chocolate goodness that holds together like a dream.
Chill it, cut it into squares, and watch it vanish from the plate before you can explain the secret.
Pro Tips
- Cube the cheese small so it melts evenly with the butter
- Sift the powdered sugar and cocoa together before adding to prevent lumps
- Line your pan with parchment paper for easy removal and clean cuts
- Store in the fridge for up to two weeks, if it lasts that long
Variations
- Use pecans for a true Southern touch or walnuts for a classic fudge feel
- Add a pinch of cayenne pepper to the cocoa for a spicy Mexican chocolate twist
- Swirl in peanut butter before chilling for a chocolate-peanut butter fudge
