Think of these as the love child of a cheese straw and a Rice Krispie treat. Sharp cheddar and butter get mixed with flour, then Rice Krispies are worked in by hand for a crunch that catches people off guard.

Roll them into little balls, press flat with a fork, and bake for 10 minutes. They come out golden, crispy around the edges, and intensely cheesy.

They’re the kind of snack that sits in a jar on the counter and mysteriously empties itself within a day or two.

Kitchen Tips

  • Use extra-sharp cheddar, freshly grated from a block. Pre-shredded cheese has anti-caking agents that mess with the texture.
  • Don’t crush the Rice Krispies when mixing them in. Fold gently so they stay intact and give each wafer that signature crunch.
  • Flatten the balls evenly with a fork so they bake at the same rate. Thick centers stay doughy while thin edges burn.
  • Store in an airtight container. They stay crisp for days and actually improve in flavor overnight as the cheese mellows.
