Chalupas compuestas are the loaded nachos’ more put-together cousin.

Start with crispy tostadas, smother them in a thick layer of refried beans and shredded cheddar, then broil until the cheese gets all bubbly and golden.

Pull them out, spoon on chili con carne, pile up shredded lettuce, and finish with a generous dollop of guacamole.

Fifteen minutes from fridge to table. That’s it.

Kitchen Tips

  • Use a generous layer of beans (about ⅓ cup per tostada). They act as the glue that holds everything together.
  • Keep the broiler door cracked and watch closely. You want melted cheese, not charcoal.
  • Serve immediately. These don’t wait well since the tostada will soften under all those toppings.

Directions

Place tostadas on baking sheet; spread with refried beans and shredded cheese.

Place under broiler just until cheese melts.

Remove from oven; spread chili and shredded lettuce over tostadas and serve at once.
