This peach sundae is what happens when a simple ice cream dessert gets dressed up for date night. Vanilla ice cream topped with cling peach halves, a warm ginger-walnut sauce, and a tablespoon of Southern Comfort poured right over the top. It’s elegant, boozy, and takes 15 minutes.

The ginger-walnut sauce is a three-minute stovetop job: corn syrup, brown sugar, and butter boiled together until thick and glossy, then loaded with chopped walnuts and candied ginger. That warm sauce hitting cold ice cream creates the temperature contrast that makes every spoonful exciting.

Southern Comfort spooned over the peach halves adds a warm, peachy-sweet liqueur note that soaks into the fruit and pools around the ice cream. The candied ginger garnish on top adds a spicy, chewy bite that plays off the smooth, cold cream.

Chef Tips

  • Place the assembled sundae dishes in the freezer while you make the sauce. This keeps the ice cream from melting before the warm sauce goes on.
  • Boil the sauce for the full 3 minutes. Under-reduced sauce is too thin and runs straight off the ice cream. You want it thick enough to cling.
  • Use canned cling peach halves, not fresh. They’re already tender, sweet, and perfectly shaped for cupping over ice cream.
  • Pour the Southern Comfort at the table for a touch of drama. The aroma hits immediately.

Variations

  • Use bourbon or peach brandy instead of Southern Comfort for a different spirit profile.
  • Swap walnuts for toasted pecans for a more Southern feel.
  • Skip the alcohol entirely and add a teaspoon of vanilla extract to the warm sauce instead.
