20 minThese little appetizers are pure elegance with almost no effort. Crisp cucumber rounds topped with a dollop of dill sour cream and a glistening spoonful of salmon caviar. Serve them surrounded by buttered heart-shaped toast points for a presentation that looks like it came from a catering company.
The sour cream and dill base is simple but essential. It provides a cool, tangy cushion that bridges the briny pop of the caviar and the fresh crunch of the cucumber. A crack of black pepper adds a little heat without competing with the delicate flavor of the roe.
Slice the cucumber into even ¼-inch rounds. Too thin and they buckle under the toppings. Too thick and they feel like you’re eating a salad instead of an hors d’oeuvre. Each round should be sturdy enough to pick up with your fingers without bending.
The heart-shaped toast points are a charming detail. Use a small cookie cutter on thin bread slices, toast them golden, butter while warm, and arrange around the platter.
Chef Tips
- Keep everything cold. Assemble the cucumber rounds right before serving. If they sit too long, the sour cream softens and slides off.
- Use the best salmon caviar you can afford. Cheap caviar can taste fishy and metallic. Good caviar tastes clean, briny, and pops between your teeth.
- Pat the cucumber slices dry after cutting. Wet surfaces make the sour cream slip right off.
- Fresh dill sprigs on each piece aren’t just decorative. They add a burst of fresh herb flavor that dried dill alone can’t match.
Variations
- Crème fraîche base: Swap the sour cream for crème fraîche for a richer, less tangy topping that lets the caviar shine even more.
- Blini version: Replace the cucumber rounds with small buckwheat blini for a more traditional Russian-style presentation.
