Cauliflower and Coconut Soup

Ingredients

2tablespoons sunflower oil
1each onion finely chopped
1large carrot diced
1/2pound cauliflower florets florets
1each apple cooking, peeled, diced
1/2teaspoon cumin ground
1/2teaspoon coriander ground
1/2teaspoon turmeric ground
1/2teaspoon ginger ground
1/4teaspoon chili powder or tabasco, to taste
1litre vegetable stock 2 cubes
2ounces coconut cream grated
3tablespoons cilantro leaves or parsley, chopped
1can beans borlotti, drained
1x black pepper
1x salt

Directions

Fry onion and carrot in oil for 5 mins.

Add cauliflower, apple and spices, stir well and cook for 1 - 2 mins.

Add stock, bring to boil, then cover and simmer for 20 mins.

Stir in rest of ingredients and simmer until the coconut has melted.

Serve hot.

Saltine Candy with Chocolate and Nuts

This recipe was made by a neighbor and given to me. He told me to try it and then he would tell me what it was made with. I tried it, loved it, and asked him for the recipe. He went and got it and now i make it all the time. Who knew Saltine crackers and chocolate went so well together!! I would recommend it to anyone. I get people at work who tell me to bring it in all the time. It is loved by everyone who makes it.
