30 minWhen you slice through the dark chocolate log, the colored marshmallows inside look like stained glass windows in a cathedral. That’s how this no-bake candy gets its name, and the visual effect is genuinely striking with minimal effort.
Melted chocolate chips and margarine get mixed with a beaten egg and powdered sugar, then folded around whole colored marshmallows. The mixture gets shaped into a log on wax paper and chilled until firm. Each ½-inch slice reveals a mosaic of pastel marshmallow pieces suspended in dark chocolate.
The egg and powdered sugar create a fudge-like consistency that’s firmer than plain melted chocolate. This is what makes the slices hold together instead of crumbling.
Melt the chocolate over the lowest heat possible. Chocolate scorches fast, and burnt chocolate is bitter with no recovery.
Kitchen Tips
- Use colored (pastel) marshmallows for the best visual effect. White marshmallows blend into the chocolate and you lose the “stained glass” look.
- Fold the marshmallows in gently. You want them coated in chocolate but not crushed or melted.
- Roll the log tightly in wax paper and twist the ends like a candy wrapper to hold its round shape.
- Chill until completely firm before slicing. A sharp knife makes the cleanest cuts.
Variations
- Coconut coating: Roll the log in shredded coconut before chilling for a snowy, tropical outer layer.
- Nut addition: Add chopped walnuts or pecans with the marshmallows for extra crunch in every slice.
