Call it retro. Call it nostalgic. Call it what your grandma made on a Tuesday night when the fridge was running low. This casserole is unapologetic comfort food built on pantry staples.

Elbow macaroni gets tossed in a creamy sauce of mushroom soup, milk, and melted cheese with a bit of green pepper and onion for crunch. Sliced Spam lines the top and crisps up in the oven into salty, golden-edged bites.

It feeds six, costs next to nothing, and tastes like a warm hug from 1955.

Kitchen Tips

  • Melt the cheese into the soup mixture on low heat, stirring often. High heat will make it clumpy and greasy.
  • Slice the Spam about a quarter-inch thick so it gets a nice edge-crisp during baking without drying out.
  • Use a sharp cheddar for the strongest cheese flavor, or go with American cheese for the meltiest, creamiest sauce.

Directions

Cook creamettes as directed on package.

Combine soup, milk, green pepper, onion and pepper.

Place over low heat. Add cheese and stir occasionally until cheese is melted, then mix cooked creamettes with cheese sauce.

Pour mixture into a 1½ qt casserole dish, cover top with slices of spam.

Place in oven at 325 degrees for about 30 minutes or until sauce is bubbly.
