1 hrsCall it retro. Call it nostalgic. Call it what your grandma made on a Tuesday night when the fridge was running low. This casserole is unapologetic comfort food built on pantry staples.
Elbow macaroni gets tossed in a creamy sauce of mushroom soup, milk, and melted cheese with a bit of green pepper and onion for crunch. Sliced Spam lines the top and crisps up in the oven into salty, golden-edged bites.
It feeds six, costs next to nothing, and tastes like a warm hug from 1955.
Kitchen Tips
- Melt the cheese into the soup mixture on low heat, stirring often. High heat will make it clumpy and greasy.
- Slice the Spam about a quarter-inch thick so it gets a nice edge-crisp during baking without drying out.
- Use a sharp cheddar for the strongest cheese flavor, or go with American cheese for the meltiest, creamiest sauce.
- Let it bubble for the full 30 minutes so the top gets that golden, slightly caramelized crust.
