This pie is where cheesecake meets candy apples in one gorgeous, no-bake dessert. A fluffy cream cheese filling sets up in a baked pie shell, sliced apples fan out on top, and a bright red glaze made from dissolved cinnamon candies drizzles over everything.
The filling comes together fast. Cream cheese beaten with sweetened condensed milk, lemon juice, and vanilla creates a tangy, silky base that firms up in the fridge without any baking or gelatin. The lemon juice does double duty: it adds brightness and reacts with the condensed milk to thicken the filling naturally.
The cinnamon candy glaze is pure nostalgia. Red Hots or similar cinnamon candies dissolve in water over low heat into a fiery red syrup, thickened with cornstarch into a glossy coating that hugs each apple slice.

Directions
In large mixer bowl, beat cheese until fluffy.
Gradually beat in sweetened condensed milk until smooth.
Stir in lemon juice and vanilla.
Pour into prepared pastry shell. Arrange apple slices over filling.
In small saucepan, over LOW heat, dissolve cinnamon candies in ¼ cup water.
Stir together remaining 2 tablespoons water and cornstarch; add to cinnamon mixture.
Cook and stir until mixture thickens and boils.
Remove from heat; cool slightly. Drizzle over apples.
Chill 3 hours or until set. Refrigerate leftovers.
