Camembert and cream cheese get whipped together until velvety smooth, brightened with a hit of fresh lime juice that keeps the richness in check.
Toasted walnuts folded in and scattered on top add crunch and an earthy nuttiness that plays off the funky cheese like a charm.
Serve it with toasted baguette slices, endive leaves, and crisp red pepper strips for a spread that disappears fast at any gathering.
Chef Tips
- Room temperature matters. Both cheeses blend much smoother when they’re not fridge-cold. Pull them out 30 minutes ahead.
- Taste your Camembert first. If it’s very ripe and pungent, bump up the cream cheese to mellow things out.
- Toast the walnuts. Raw walnuts are fine, but a quick toast in a dry skillet deepens their flavor and adds a satisfying snap.
Ingredients
Directions
Blend Camembert in food processor until smooth.
Gradually add cream cheese, processing until smooth after each addition.
Add lime juice, process until smooth.
Transfer mixture to bowl. Mix in 2 tablespoons nuts.
Season with salt and pepper.
Spoon pate into 2 cup bowl. Sprinkle with additional chopped walnuts.
Serve with toasted baguette slices and crudities like endives and red pepper strips.
If Camembert is very strong, increase amount of cream cheese.
